The following inspections were conducted by the Lenoir County Health Department:

El Norteno

1701 West Vernon Avenue, Kinston

Score: 94

Inspection date: 9/3/19

Observations:

Hand-wash sinks near prep line and dish machine did not have soap;

Raw meat in cooler beside stove was not separated according to final cook temperature;

Some dishes had food residue;

Cooler was unplugged for about two hours and food was above 50F; tomatoes in prep unit were 45-47F;

Wet wiping cloths left around kitchen; when not in use shall be stored in proper-strength sanitizer;

Bottom of doorway in walk-in freezer is in disrepair;

Water standing on kitchen floor;

Inspection date: 9/3/19

Observations:

No certified food protection manager present;

Frozen hamburger thawing in walk-in stored above ready-to-eat foods;

Evidence of mouse in food storage pantry; one bag of instant mashed potatoes had been chewed and mouse droppings were found; employee stated exterminator was aware;

Inspection date: 9/4/19

Observations:

Dinex refrigerators were 53F-54F; yogurt in first one was 52F and milk in second one was 55F; potentially hazardous food shall b e41F or less;

Some dishes were stacked wet and water had collected on edges; let dishes air dry;

Inside/outside of refrigeration equipment, shelving, inside of drawers and dry food bins need additional cleaning - repeat violation;

Floors and walls need additional cleaning - repeat violation;

3725 West Vernon Avenue, Kinston

Inspection date: 9/11/19

Observations:

Dish machine was not sanitizing at 160F; manager called Hobart to examine machine;

Green beans and rice in prep unit drawer temped at 48-50F; manager stated they had just been stocked and were out of refrigeration for a brief time; food moved to walk-in to cool

Pasta salad in walk-in was left in large plastic tub with the lid tightly closed; cool foods in thin layers, by stirring frequently, by tenting lid/covering or by using ice baths;

Sanitizer in wiping cloth buckets read 0 ppm - shall be 200-400 ppm;

Some dishes on drying rack were stacked wet;

Single-service cups and lids were stored uncovered in dispenser;

Inside of refrigeration units need additional cleaning - repeat violation;

Floors need additional cleaning underneath/behind equipment - especially underneath dish machine;

Inspection date: 9/18/19

Observations:

There is some uncertainty regarding the employee health policy; a basic employee health policy provided by EHS shall ensure employees are adequately trained (regarding) employee health policy;

Several utensils, the saw, the slicer, a few pans and several plates need additional cleaning - corrected during inspection;

Consumer advisory is provided but does not include all required components; food that may be cooked to order shall be listed as such; see pages 98-99 of the N.C. Food Code for further guidance;

Frozen mozzarella cheese was being thawed under 82F running water - corrected during inspection, cheese moved to walk-in to thaw; When thawing under running water, water shall be no more than 70F;

Ice bin behind bar has no cover/lid, leaving ice exposed;

Cutting boards and pans beside hand sink are in splash zone from handwashing;

There is a sheet of ice in the bottom of a small freezer in the cook area; some shelving is dusty;

Floors/walls behind equipment need additional cleaning;

Some shell-stock tags are incomplete;

Observations:

Raw hamburger meat thawing in walk-in on top of boxes of raw bacon; raw hamburger has a higher final cook temperature than bacon; hamburger meat shall be stored below raw bacon or other whole meats;

Flies in kitchen;

Some staff wearing proper hair restraints, some wearing ineffective or no hair restraints;

Temperature of dishwater was 105F - shall be at least 110F while dishes are being washed;
