Staff touches fryer basket handle upon entering kitchen after coming in from outside.
Raw eggs stores above open bag of prepackaged, ready-to-eat hamburgers.
Strainer for raw chicken washed in middle sink compartment, rinsed in same compartment, and not sanitized.
Small cups of ranch dressing in refrigerator are at 63F - made approximately 5 hours prior and should have reached 41F.
Sauteed onions and shredded cheese stored at room temperature in condiment tray at 84F and 79F. Should be held at higher and lower temperatures, respectfully.
No foods are date marked.
Food employee wears gloves but is wearing ring underneath.
Wet wiping cloths stored on drainboard and prep table.
Wooden table used beside cook area is in disrepair and hard to clean.
Lighting is short in a few areas.

Observations:
There is not a Certified Food Protection Manager present.
Staff was observed talking on the phone with gloves then removing the gloves and immediately putting on new gloves. Hands should be washed in between changing gloves.
Sanitizer in the bucket and the 3-comp sink was over 500 ppm. Should be maintained at 50-200 ppm.
Large chub of ground beef was thawing in cold stationary water in the food prep sink. This is not an approved thawing method.
Wiping cloht was in a bucket of >500 ppm bleach. Should be 50-200 ppm.
The ice cream scoops are not being stored in running water dipper well. These should be in running water.
The cook line equipment observed to have pretty heavy buildup of dust/grease. The hood filters need cleaning as well.
Staff personal items are being stored on top of food containers. A place for these items needs to be provided away from food and food service items.

Employee washed hands and turned faucet off with bare hands.
Employee moved chicken, made sanitizer, along with several other tasks without washing hands.

Thermometers were not accurate.
Several flies/gnats in kitchen.
Knives stored between prep units, cutting board stored behind faucet, and utensils stored in contact with wall behind 3-comp sink.
Floors, walls, ceilings, oil spill behind fryers/oven, build-up under prep units, walls behind 3-comp sink, walls beside flat top, outside of equipment, inside of equipment, sauce cart, dry food bins, rice warmers, and HVAC return vent, need additional cleaning.
Dumpster needs to be covered with tight-fitting lids or doors.
