Observations:
Employee drank cup in dish washing area and returned to work.
Observed fly killer on the top shelf to the hot holding table where plates are ready for pick up by servers.
Observed bowls and plates used as scoops inside of coleslaw.
Handles to refrigerators broken or missing.
Shelving, floors, walls, ceilings, food bins, and inside and outside of equipment needs additional cleaning.

Observed dawn dish soap on the cook top across from the prep sink.
Observed noodles sitting on the prep sink at a temp. of 85F.
Observed chicken wings in a rubber made bucket marinating on the ground by the prep sink, chicken in the walk in on the top shelf uncovered, dry ingredients in the dry storage area without covers.
Observed light in the walk in at 4 ft. candles.

No date mark on items in the fridge and items in the walk in with a 2 day date mark not 7 days.
Observed ribs removed from the oven sitting at room temp. for cooling.
No side panels or barrier for protecting food from the side were observed on the salad bar.
Sanitizer in red wiping cloth buckets were reading at or below 0ppm.
Observed heavy build up on equipment, reach in fridges, chef drawers, outside of microwaves, shelving, filters and hoods, outside of equipment on the cool line.
Observed leaks at almost every hand washing sink.
Observed dumpster lid open.
Observed build up of food splatter and dust on walls, floors, and ceilings on cook line and throughout facilities.
