The following restaurant inspections were conducted by the Lenoir County Health Department:
Chef & The Farmer
120 W Gordon Street, Kinston

Observations:
A stainless steel pan, two plates, a skillet, and a squirt bottle top were observed with baked on food or food remains and were not thoroughly cleaned well.
Some foods not date marked.
Chicken Dumpling mixture missing label to identify food.
Male employee working front line not wearing beard guard. Another employee with long hair wears a hair restraint, but it is not effective.
Wet wiping cloths found on countertops.
Observed clean knives and utensils stored in a bucket of sanitizer on food prep sink - possibility of contamination (no need to keep clean utensils in sanitizer). Plates stacked and stored in contact with dusty air vent from ice machine.
Build up of crumbs, debris, etc observed at the bottom of the refrigerators for Viv' Kitchen, on the bottom shelf of the prep table in kitchen, on the racks in the walk-in refrigerator and freezer, and on top of the ice machine, etc.
There is a leak at the three compartment dish sink under the wash compartment.
Build up of dirt, crumbs, debris, etc are present on the floors, walls and cleanings. Dust build up is present on and around a/c vents on ceiling.
Observed employees belongings stored with clean dishes.
LLC Culinary Arts

Open gallon of milk is not date marked.
Ice scoop holder for metal ice scoop has build-up of residue from ice scoop being dropped in holder.
Corners of baffle in ice machine has black crud.
Some dust in cage where countertop equipment is stored.
Wallboard coming off wall in few areas.
Light intensity is short in a few food preparation areas.
El Nuevo Tequila Mexican Restaurant

Observations:
Employee hand-wash at waitress station is currently blocked with brooms and dust pan.
Oyster tag missing from latest bag.
Raw shell eggs stored above ready to eat and uncovered food items.
Knives on magnetic strips, the magnetic strip for the knives, cheese grater on the inside and outside, and can opener need additional cleaning.
Date mark missing on foods.
A large pot of cheese was sitting on the floor of the walk in cooler, uncovered, as well as two pans of cheese, chile rellenos, lettuce, and ice was uncovered at drink stations. These items shall be covered to prevent contamination from occurring.
Drain boards of dish machine are being used as a food prep area. Food shall not be prepped here to prevent possible contamination from occurring.
Handles for dry ingredients immersed in the ingredients.
Can opener is visibly soiled and required extra cleaning.
Dish machine and drain boards were very visibly soiled and require thorough cleaning.
Observed build up on gaskets through out facility, on shelving units, on outside of equipment, etc.
Mops stored upside down where the head could drain onto the handle.
Observed missing ceiling tiles in storage room. Walls and ceilings need additional cleaning. Floor of the walk in cooler is visibly soiled.

Observations:
The slicer was very soiled.
Staff observed with long painted fingernails and watch and rings.
The quaternary sanitizer at the 3-comp sink is not the correct strength.
The corners of the sink drainboards have a black buildup.
The gray rolling cart needs to be cleaned from the visible soiling.
There are a number of areas where the floor tile is damaged including by the dish machine, the back door, and the walk in cooler and freezer. The wall behind the 3-comp sink is damaged.
The floor underneath the sinks and some equipment visibly soiled and needs better cleaning.

Observed black build up present in ice machine and build up present in ice scoop and ice scoop holder.
Rice and beans in large white food safe containers not labeled.
Evidence of mice present in dry storage room.
Maintain sanitizer containers for in-use cloths free of visible debris and soil. Dirty and wet wiping cloths on countertop of dish area.
Cutting boards have deep groves, these shall be replaced/repaired to allow proper cleaning.
Shelving units and shelves in coolers are rusting. Corner of door in walk in cooler is damaged and rusting.
Observed build up at the bottoms of coolers, on shelving in cooler, shelving racks, under equipment, on gasket, etc.
Damaged or missing ceiling tiles present in kitchen, and rust on ceiling vents.
Food and grease build up present on walls, and floors under equipment.
